At Heritance Aarah, a new dining experience begins not at the table, but in the garden.

Fehi Raha, meaning ‘Green Flavours’, is a curated garden-to-table journey designed to bring guests closer to the ingredients, people and natural environment behind their meal. Set within the resort’s organic garden, the experience turns dinner into something more personal: an opportunity to walk, discover, taste and understand where food comes from before dining.

The journey begins with a guided walk alongside the chef, waiter and gardener. Guests can see, smell and learn about the herbs, vegetables and tropical produce growing around them, while discovering how different plants are cultivated within the unique conditions of a Maldivian island.

Depending on the season, the garden brings together fresh island-grown herbs, leafy greens, tropical fruits and vegetables, allowing each menu to evolve naturally with the harvest. As with any working garden, what is available changes naturally throughout the year, allowing Fehi Raha to evolve with the harvest rather than follow a completely fixed menu.

Where practical, guests may even pick selected produce during the walk, as the chef can take individual preferences into consideration based on what is available, while dietary requirements and allergies are discussed in advance. The personalisation comes through conversation and interaction: understanding what the guest enjoys, sharing the story of the garden and creating a closer connection between what is growing and what eventually appears on the plate.

That connection continues at dinner.

The philosophy behind Fehi Raha is intentionally simple: freshly grown, thoughtfully prepared and beautifully served. The menu draws directly from the garden, bringing together seasonal produce, island-inspired flavours and refined preparation in a dining experience that feels fresh, personal and closely connected to place. The menu, however, is designed to change according to seasonal availability and growing conditions, allowing the garden itself to influence the dining experience.

Sustainability is equally central to the concept. The garden is cared for with a focus on organic and responsible cultivation, avoiding chemical fertilisers and working as closely as possible with natural growing practices. Producing ingredients within the island also supports more responsible sourcing and helps reduce unnecessary transportation where possible.

Just as importantly, the garden becomes an educational space. Guests gain insight into cultivation methods, growing food in the Maldives and the people responsible for nurturing the produce long before it reaches the kitchen.
