A Week Worth Tasting with Sav Perera

A Heritance Hotels & Resorts Limited Series

Across the island, every region has its own rhythm. Raw ingredients change with the land. Recipes carry memory. From lake fish and village vegetables to high-grown tea, coastal spices, healing herbs and firewood kitchens, Sri Lanka’s culinary identity is vast, layered and deeply rooted in tradition.

Guided by Sri Lankan-born chef Sav Perera, ‘A Week Worth Tasting’ follows the connection between destination and food across three distinct Heritance experiences in Sri Lanka, uncovering the people, traditions, culture and ingredients that bring each region to life.

Facilitated by Heritance Hotels & Resorts the journey follows how these lessons, flavours and stories are carried into refined culinary experiences, where regional traditions are thoughtfully reimagined through fine dining gastronomy.

Meet Sav Perera

Sav Perera is a Sri Lankan-born chef, MasterChef Australia Top 3 finalist and judge on MasterChef Sri Lanka, known for championing Sri Lankan cuisine on an international stage. Based in Adelaide, her cooking is shaped by memory, family, heritage and the flavours she grew up with, especially those inspired by her Ammi’s kitchen. In ‘A Week Worth Tasting’, Sav returns to Sri Lanka with Heritance Hotels & Resorts to explore the island’s culinary identity at its source.

The Journey

The journey begins at Heritance Kandalama, where Geoffrey Bawa’s design, forest, lake and local life come together in one of Sri Lanka’s most atmospheric landscapes. Through nearby farms, roadside kadés and the wild beauty of the surrounding region, Sav discovers the ingredients, traditions and everyday flavours that shape Kandalama’s culinary identity, while the hotel transforms these influences into distinctive dining experiences.

The second Kandalama chapter moves closer to the lake and the communities shaped by its waters. From fishermen at dawn to village-style cooking, open fires, clay pots and ingredients gathered from the land, this episode reveals the care and craft behind Sri Lankan cuisine, before these regional influences are brought back to the hotel and transformed into the signature dining experiences.

In the misty highlands of Kandapola, the journey takes on a cooler, quieter turn. Through Heritance Tea Factory, Sav steps into a world shaped by tea, heritage, local produce and the people of the estates, where the story of the leaf moves from tradition into unexpected expressions of flavour, exploring refined dining experiences rooted in the richness of the hills.

The journey moves deeper into Kandapola, where mist-covered trails, farms and estate communities shape the character of the highlands. Through Heritance Tea Factory, Sav steps into a world where daily life, cultural traditions and local produce are closely tied to the land, revealing how the flavours of the hills are shaped not only by tea, but by the people who live and work among it, stories that come together in refined dining experiences rooted in the richness of the region.

The final chapter arrives on Sri Lanka’s southern coast, where food becomes part of a deeper journey into rest, balance and mindfulness. At Heritance Ayurveda, Sav explores the philosophy of Ayurveda through nutrition-led cuisine, treatments and doctors, and the connection between body and mind, before bringing fresh coastal ingredients and traditional cooking techniques together in a nourishing culinary experience shaped beside the sea.
